It's October and with that, came the fall weather.  We just got over a 2 week heat wave where temps rose to a humid 32°C (wtf) and now it's a cold and windy 10°C.  Right now, everyone is focusing on Halloween but I'm over here, like:

Not ashamed to admit that Christmas is my favourite time of year and everytime Thanksgiving rolls around, I get stoked for Christmas.  But let's focus on October because October means pumpkin things....except PSLs; I hate those; it really tastes like shit in a cup.  Here are some recipes I'll be trying since I just stocked up on pumpkin puree.

Paleo Pumpkin Coffee Cake

+ Confession:  I have a morbid fascination with serial killers and found a YouTube channel full of True Crime documentaries.  I converted all of them to .mp3s so I've been listening to them while cleaning or driving to the gym.

+ I make a mean pesto chicken pasta.  Although you can buy pesto, I prefer to make my own and now that I have my own basil plant, I look forward to harvesting the leaves for fresh pesto.

Pesto:
  • 3 handfuls of fresh basil
  • salt/pepper to taste
  • handful of walnuts,  pine nuts or sunflower seeds
  • 1/3 cup fresh shredded parmesan cheese
  • start with 2tbsp olive oil
-- place everything except olive oil in a food processor; pulse until combined.
-- add olive oil; pulse.  Add more olive oil until preferred consistency.
-- cover and set aside in fridge.

Pasta & cream sauce
  • 2 cloves garlic, chopped
  • salt/pepper to taste
  • 3 green onion, chopped
  • 1 cup heavy cream
  • 4tbsp coconut milk
  • 1/4 cup starch water (from boiled pasta)
  • chicken, cubed
  • 1/4 cup sun-dried tomatoes, sliced
  • 1/3 - 1/2 cup pesto
-- boil the pasta al dente and drain. Save 1/2 cup of the starch water.
-- Toss pasta with a bit of olive oil, set aside.
-- in large sauce pan on low heat, add chicken, pasta, green onions.  Heat and mix.
-- add cream, starch water, sun-dried tomatoes and pesto, combine well.
-- add coconut milk, salt and pepper to taste.

The trick to creamy sauce is the coconut milk which I accidentally discovered last week.  I had some leftover coconut milk from a recipe and added it just for the hell of it and wow, what a difference it made!

+ While listening to her playlist, Kayla stared at herself in the mirror for hours, rolling around on the ground and pretending she was in a music video.


+ Kayla got a fat bike....unbeknownst to me.  My husband and I had discussed this earlier and I thought we agreed to wait.... but I guess not.  My husband decided to jump the gun and funded it through his own bike fund because he couldn't wait. 
 


+ Yesterday afternoon was gorgeous so we spent it on the trails.  I decided to give trail running another try (my knees do not like running) and wow, I forgot how amazing trail running is.  I literally ran with a smile on my face because I felt so good but then my knees realized what was happening and said "wtf do you think you're doing?!" and crapped out at 3km.  I had to hike the rest which was alright but I could have run much longer #oldpeopleproblems.


+ Kayla started the book Wonder on Friday evening and finished it Saturday; she was planted on the couch for more than 4 hours on Saturday afternoon and when she was done, suffered from her first book hangover for the rest of the weekend.  Girl, we all feel you.


+ Shoulder rehab/therapy is in full effect and let me just say that rehab workouts are the most boring thing ever.  My weight limit is 5lbs so when I'm doing my PT exercises, I feel the ahole bro in me trying to come out and say to everyone "I SWEAR I CAN LIFT HEAVIER; I'M INJURED RIGHT NOW".  Calm down, ahole bro; calm down.

I've been incorporating something new into my rehab routine - indian clubs.  I had never heard of them until a friend told me about them and lent me a set. They're great for improving shoulder strength and flexibility.  

Aside from the physical therapy and the struggle I'm experiencing with the slower/less intense workouts, I'm also trying to change my perspective about workouts.  I'm so used to muay thai intensity (aka 'crazy/you want to die' intensity) that switching to anything less than that is so very different and takes some time to adjust.  I need to remember that this is for my long term health and to enjoy the other aspects of staying active....which means  exploring other avenues of fitness that I normally wouldn't do (anymore) like Yoga, Pilates, cycling or taking long walks.

  1. Im not a fan of pumpkin anything but I think Id like the coffee cake because - yum. Yay for Kayla's new bike! What kind is it. We're looking for bikes for both of us to ride since he loves bike riding. Im 4'11 so Im looking for a smaller bike ... if Kayla's is good let me know.

  2. I can't do PSLs but I love pumpkin everything else - def. going to try that pumpkin coffee cake. Wonder is a great book to have a book hangover from - awesome story and I can't wait to take my 13 y.o. to the movie next month. She re-read it a couple times in preparation. Trail running is next on my list of things to try - I love hiking in the woods and I love running, but I'm nervous about trail running.

  3. That is so great that Kayla got a bike, it such a nice one!! I want to start riding a bike but I'm scared of falling off. I got into a bad bike accident at 13 and haven't been on a bike since. I got hit by a car but I was ok but it really rocked me.

  4. Pumpkin anything is not my jam. I've tried, I just don't like it at all. Your recipes look yummy though. I hear you on the little weights, I'm like that too 'i can life more'!

  7. Awww look at Kayla on her new bike! I love that picture of her and daddy on their matching bikes :) Those clubs look like they could double for a weapon if needed hahaha. My company is holding a conference call at noon. Who the fuck does that?? I want that pesto in my mouth!!!!
